A food company specializing in fermented foods such as soy sauce and drinking vinegar has purchased a Flashmix FMX75.
They contacted Silverson because they were having trouble mixing rice flour into the water. Before purchasing the FMX75, operators at the company's factory had to add approx. 1146lbs (26 x 44lbs sacks) of rice flour, along with additives, into the top of a 1320 gallon vessel. The flour was added to approx. 2425lbs of water and mixed with an agitator for 3 days to allow the powder to disperse and ferment. After this time another approx. 485lbs (11 x 44lbs sacks) of rice flour and 4lbs of yeast had to be added to the vessel.
They had two consistent problems with their previous process - firstly, adding all of the rice flour to the top of the vessel took a huge amount of manpower and increased the already lengthy process time and the chance of operator error.
Secondly, the rice flour formed agglomerates when added to the water. The agitator they had been using could not break up these agglomerates and as a result, the product in the vessel did not ferment uniformly, causing inconsistent product quality and poor repeatability.
